Stafido olives (Greek: Stafido-Eliés) or Throumba (pronounced like the English 'th') are olives that are harvested ripe, i.e. dark brown. They are sun-dried and salted, which is why they appear wrinkled, but have a particularly mild taste. The Greek name of these shriveled olives means raisin olives because they resemble sun-dried grapes.
